Malted grain fermented, distilled, and then aged in new, sweet, and/or charred, oak is about as similar as the stories of these spirit kin get, and their respective pedigree is fiercely defended in legislation as well as legend. They are as diverse as the grain, equipment, and methods used by their creators.

There is no doubt rum had a rough upbringing in the new worlds. Rum has gone from notoriety to enjoying protection under the law. Its story is as colourful as the varieties now being produced. Sugarcane transformed into a transportable commodity became a bounty of privateers, a preventative treatment for scurvy, and a form of payment for British troops and sailors. Whether on the high seas or in the Australian outback, rum has been an explorer.

Vodka plays outside the rules. Unlike other liquors, there are no rules about what a vodka must be made from. Vodka became a collective term for a spirit made from whatever was locally available: root vegetables, grain, or fruits.

Tequila & Mezcal
The production of tequila and mezcal brings centuries old horticulture and European industry together. Akin to wine production, it is the variations in traditional growing practices and fermenting the agave which contribute largely to the final flavour of the liquor. Through the European contributions of distillation and ageing, that further flavours can be developed.
Popularly associated with lemon or lime and salt, tequila and mezcal are equally appreciable served the traditional way – neat. Take your time to taste the hard work behind these tequilas and mezcals.
If the craft of creating distilled liquor was a chess match, gin’s strength would be in the end game. Named from the berry that provides its primary character, gin has the same medicinal origins as some apéritifs and digestifs; aqua vitae infused with selected herbs and spices.
The base liquor may have origins of grain or grape, gins deviations are derived from infusing the flavour into the distillate. Contemporary alchemists experiment with the botanicals they introduce to their vital water creating an endless variety of concoctions, of which we can offer you a select few.
Cocktails can be simple or complex, classic or controversial. We offer a select range of liqueurs and other liquors for building cocktails to express you.
For the unfamiliar or undecided, we offer a changing selection of 30mL drams available individually or as a gift pack.
Packs can contain four or six 30mL samples going Across the range (of spirits) or Down the list (of a single spirit variety) for you to gift or find yourself a new favourite or two.
